Mashed Eggplant

Ingredients
Eggplant – 1 kg
Chopped onions – 3 pieces
Dry chillies – 4/5 pieces
Soybean oil – 1 cup
Mustard oil – 3 tbsp
Chopped coriander leaves – As required
Salt – As per taste
“AJI-NO-MOTO®️” – 1/4 tsp
Cooking Procedure
1. First, cut the eggplants. Then fry the eggplant, chopped onion, dry chillies.
2. Then in a bowl mix fried chillies, chopped coriander leaves, mustard oil, salt, fried eggplant well and add “AJI-NO-MOTO®️”. Enjoy your favorite Mashed Eggplant filling!
